famous Shepherd's Pie



Ingredients:


 For the mince:


 1/2 kg mince meat (you can use any type of meat... but it tastes the best with beef mince. The one I made was with mutton mince)

 2 red onions finely chopped

 1 green chili (depending on how hot you want it you can add more)

 A handful of coriander

 1/2 tsp turmeric

 1/2 tsp red chili powder

 1 tsp garlic powder

 2 tbsp oyster sauce

 2 tbsp tomato ketchup (just for that little tomato flavor)

 Salt and pepper to taste

 1 stick of cinnamon or 1/2 tsp of cinnamon powder

 2 tbsp canola oil

 1 tbsp garlic butter


 For the potatoes:


 2-3 large potatoes, boiled and mashed

 Garlic butter as required

 Dried mixed herbs (rosemary, thyme, parsley, chives)

 A handful of green/spring onions

 A handful of coriander

 Milk as required

 Salt to taste


 Method:


 - Heat oil and garlic butter in a pot and add the onions and finely chopped chilies

 - Add salt to bring out the moisture of the onions. Sprinkle water from time to time if you feel the onions are sticking at the bottom of the pan

 - Cook them till onions are tender and add the meat

 - Brown the mince meat a bit and add the remaining ingredients except the coriander

 - When the mince starts to release water, add the coriander

 - Cook the meat through and dry out the water but be careful not to dry out the mince

 - Pre-heat the oven to 200C while you assemble the dish

 - Mix the ingredients of the potatoes together to get a fluffy and soft consistency

 - Place the mince in a baking dish and spoon over the potatoes, layering them evenly over the minced meat.

 - Run a fork over the potatoes and add little blobs of butter here and there over them.

 - Place in the oven for 20-25 minutes till the top of the potatoes brown and crisp up a bit

 - For extra flavor, you can grate some Parmesan cheese over the potatoes. It tastes fab!


 Buttered Mixed Veggies

 Ingredients:


 2 cups boiled mixed veggies (I used frozen peas, carrots, corn, beans... anything goes... you want fresh... go for it)

 Garlic butter or regular butter (as much as you want. I never skimp on butter)

 Salt n' Pepper to taste

 A squeeze of lemon or lime


 Method:


 - Melt butter in a pan and add the veggies

 - Stir in salt and pepper and any other flavor you want

 - Cook them till they are evenly coated with the butter

 - Serve in a bowl with a squeeze of lemon or lime
