Nachos








Ingredients:
1 lb. ground beef
1.25 oz. pkg. taco seasoning
10 oz. can diced tomatoes with green chilies, with juice
16 oz. can refried beans
tortilla chips
4 oz. Mexican style shredded cheese (or colby jack cheese)
shredded lettuce, diced tomatoes, sliced green onions, sour cream, etc for topping



Directions:
Brown the ground beef in a skillet, breaking up the meat with the back of a wooden spoon. Drain the grease and add the taco seasoning to the pan, stirring to coat the meat. Stir in the tomatoes with juice and the refried beans. Stir to combine the meat and beans very well. Remove from the heat. Place a good layer of the tortilla chips (I used 1/2 of a bag) in the bottom of a 9x13 rimmed baking sheet. Pour the ground beef mixture over the top of the chips and spread around to cover the chips. Top with the cheese and place in a 350 degree oven for 10-12 minutes to melt the cheese and warm the chips. Remove and top with shredded lettuce, diced tomatoes and green onions. Serve with a side of sour cream.
